Kimchi Fried Rice (Kimchi Bokkeumbap) is one of Korea’s most beloved comfort foods.

Ingredients (2 Servings)
2 cups cooked rice (preferably day-old rice)
1 cup well-fermented kimchi, chopped
2 tbsp kimchi juice
2 tbsp cooking oil
2 cloves garlic, minced
1/4 cup diced onion
1/4 cup diced green onion
100g pork belly or spam (optional)
1 tbsp soy sauce
1 tsp sugar (optional)
1/2 tbsp sesame oil
1 tsp sesame seeds
2 eggs (for topping)
Instructions
1. Prepare Ingredients
Chop the kimchi into bite-sized pieces. Dice the onion, green onion, and optional meat.
2. Sauté the Base
Heat oil in a large pan over medium heat.
Add garlic and onion, sauté until fragrant.
If using pork or spam, cook until lightly browned.
3. Add Kimchi
Add chopped kimchi and stir-fry for 2–3 minutes.
Pour in kimchi juice and cook until slightly reduced.
4. Add Rice
Add cooked rice and break up any clumps.
Stir-fry thoroughly so the rice absorbs the flavor.
5. Season
Add soy sauce and sugar (if desired).
Stir well and cook for another 2–3 minutes.
6. Finish
Drizzle sesame oil and add green onions.
Top with a fried egg and sprinkle sesame seeds before serving.
